Why column name changes, if u can share sample sheet and purpose and date u want from it I can try

Has these columns the name in the first row? You can use it to define column by this value.
Or you can detect column by it's name. It's possible and you can use it after read the excel to the DataTable.

You can read full DataTable into variable at first and use the filterDataTable activity to extract just one column. So, you shouldn't check each column name separately.
